My comment:
(a) There is no need to read the report. I bring it to your attention, merely for your viewing the menu (which is in print is huge, located just underneath the title--but small and low in the Web page), as well as the only photo in print (but the third photo in the Web), whose caption reads (in print), “Roasted glazed pig head with condiments and toast at Love & Salt, in Manhattan Beach, Calif, is the kind of dish that skews male, chefs and menu designers say.”  The photo shows a half head, split midline.

Americans, especially blacks, told me that in US, basically blacks eat these things, especially in the South (and I told them Chinese/Taiwanese enjoy these body parts). So I am surprised to find a pig head on the menu. It won’t take time to roast it (because the tissues there are quite thin). However, Americans do not like eating in a messy manner, using hands. (I have not seen Americans eating chicken wings, which I am aware are handled with hands.)
(b) Whether Americans order and eat “along gender lines” is unclear to me. I do not believe anything unless it is backed up by science.
