Note:
(a) "When I lived in Berlin for nearly seven years, I was surprised at first to find that kindergartens and child-care centers (called 'kitas') were all about play, all the time."
(i) Remember that always, the first letter of a German noun is capitalized. Here it is anglicized, by having a lower-case k.
(ii) German-English dictionary:
* Kita (noun feminine; plural: Kitaen): "daycare facility for children" https://dict.tu-chemnitz.de/ding ... =kita&iservice=
Wiktionary says it is shortened from Kindertagesstätte (noun feminine; plural: Kindertagesstätten), with the same meaning as Kita and Tagesstätte (noun feminine; plural: Tagesstätten).
(b) "That approach is echoed in a handbook by Margarete Blank-Mathieu for German instructors working with young children."
Margarete Blank-Mathieu is German, and wrote five or six books (in German). "[F]or German instructors" might be helpful in identifying which book is alluded to, but I will not try.
(c) "Ms Zaske is the author of 'Achtung Baby' "
(i) Achtung https://en.wikipedia.org/wiki/Achtung
(may refer to 1: "Achtung, a German word meaning 'attention[!; an order]' " * * * 3: "Achtung Baby, a 1991 album by U2")
(ii) When I googled the meaning of th4e title, Google returned the following at the top of results.
