(1) April Dembosky, Leaders of a Health Snack Attack; Entrepreneurship; Keith Belling and Pat Turpin developed the 'popped potato' and invented a market. Financial Times, May 2, 2012.

(a) Excerpt in the window of print: 'You would never think it's healthy. Then you turn it over and you see it's only 100 calories'

(b) Two consecutive paragraphs:

"Mr Turpin was living in Los Angeles. He knew a rice cake manufacturing facility, and took Mr Belling along to see how rice kernels were loaded into hot, high-pressured popping machines and fused into rice cakes.

"'That's where I had my epiphany,' Mr Belling says. 'It made me realise you could pop a potato.' That was 2007.

(c) My comment:
(i) There is no need to read the rest.
(ii) What Are Popchips? How we pop. (from the company, undated)

(2) Healthy snacks in Japan | The Joy of Soy; Defying Western food imperialism. Economist, Apr 28, 2012.

("the average American eats less soya in a year than the average Japanese eats in a day")

Note:
(a) Kaoru YAMADA  山田 薰
(b) Otsuka Pharmaecutical Co, Ltd  大塚製薬

(c) News release: Breaking Conventional Rules of Snack Foods; Healthy and innovative soy snack "SoyCarat" debuts. Otsuka, Mar 16, 2012.

* SoyCarat  ソイカラ
(d) The article says, "SoyCarat’s brand name is tricky: whatever the spelling, it evokes the idea of two things children shun and adults munch only reluctantly."

It alludes to both soy bean and carrot (not diamond).
