Maureen Farrell, Big Scoop; Bruce Ginsberg aims to do what General Mills

Quote:

"Carvel has been serving up soft-serve ice cream from machines for decades.

"Kateman teamed up with Product Genesis, an offshoot of the Massachusetts
Institute of Technology, which had developed a cheaper way to make fake snow
. Kateman's prototype--marketed under the name Turbo Dynamix--injected air
into a liquid dairy mix and flash froze it.

"In the current version the liquid dairy mix is pumped through a dual-sided
chamber where it gets combined with flavors, toppings and just the right
amount of air before being sprayed across a 1-inch-thick, pizza-size
rotating wheel containing a 10-degree-Fahrenheit solution that freezes it
into ice cream.

(a) Carvel (restaurant)

(Headquarters Farmington, Connecticut; "founded and run by Tom Carvel for
its first 60 years. In 1929, Tom Carvel borrowed $15 from his future wife
Agnes and used it to build and began operating a frozen custard trailer.
Over Memorial Day weekend of 1934, Carvel's truck suffered a flat tire in
Hartsdale, New York, Carvel started selling his custard at the site of the
breakdown, the parking lot of a pottery store. Within two days, his entire
stock, much of it partly melted, had been sold, and Carvel realized that
both a fixed location and soft (as opposed to hard) frozen desserts were
potentially good business ideas")

(b) The report uses Carvel (which makes soft serve) to demonstrate hard ice
cream can be made on site.

Soft Serve

(product is pre-made at "point of sale")

(c) The reports states, "MooBella's machines now go for $40,000 (leases run
$400 a month), and 5 gallons of dairy mix cost $150--meaning that a 4.25
ounce scoop costs roughly $1.20 to serve. * * * Worcester Polytechnic
Institute [] serves 200 scoops a week at $2.50 each.

City of Worcester is about 50 miles west of Boston. In Boston, the same asks
for $1.99.
