(a) Regarding "Hold your hollandaise."
(i) hollaindaise (n; French sauce hollandaise, literally, Dutch sauce; First Known Use 1907):
"a rich sauce made basically of butter, egg yolks, and lemon juice or vinegar"
(ii) Hold your horse. Phrase Finder, undated.

In the Web I can not find a single use of "Hold your hollandaise" other than this piece of advice. Obviously the columnist coined it to suit the party scene at issue.
(b) shindig (n; probably alteration of shindy; First Known Use 1842):
"1a : a social gathering with dancing
b : a usually large or lavish party"
