You may want to start by taking a look at Figure 1 at page 5 (page number is at the bottom of each page). Each "cavity" can be either on or off, thus "bistable" (the heading in page 3).

At page 5, please take notice the last two sentences, so as to understand how a cavity--and therefore the whole screen, for it is useless to produce ONE cavity of black--produce black color; as well as how full color is generated ("A full-color display is assembled by specially ordering IMOD elements [cavities, that is] reflecting in red, green and blue wavelengths")
Then you may read the text starting with the heading "Reflective Display (Continuous Refresh Type)" (at page 2) whose last sentence is: "So far, most portable devices employing reflective displays are the continuous refresh type."
Read till the end. Take notice of
(i) "Speed" at page 9, and
(ii) "Robustness" at page 11 (comparing this technology with LCD).
